Ingredients

  • 2 cups long grain rice, cooked and chilled
  • 1/4 cup chopped green onion
  • 1 small red pepper, diced
  • 1/4 cup celery, diced
  • 1/4 cup ripe olives, drained and sliced
  • 1/4 cup oil
  • 1-1/2 tablespoons wine vinegar
  • 1/2 teaspoon Dijon mustard
  • Salt & pepper to taste

Method

Step 1

Combine first 5 ingredients in a bowl.

Step 2

Beat/whisk together oil, wine vinegar, and mustard. Pour over rice mixture. Season with salt & pepper. Toss well. Chill before serving.
