Ingredients

  • 1 pound hot or sweet Italian sausage
  • 1 pound sharp cheddar cheese, shredded
  • 3 cups biscuit mix
  • 3/4 cup water

Method

Step 1

Remove sausage from casings. Cook in a large skillet, breaking up the meat with a fork until no longer pink, about 8-10 minutes. Drain off fat.

Step 2

Spoon sausage into large bowl. Cool completely. Break up or chop sausage into smaller pieces if necessary. Add cheese, biscuit mix and water. Mix with a fork until blended.

Step 3

Roll into 1-in. balls. Place on large well greased cookie sheet 2-in. apart. Bake at 400° for 12-15 minutes until puffed and browned. Remove from cookie sheets. Cool completely on wire racks.

Step 4

To freeze, cook then place in freezer in a single layer on jelly roll pan or cookie sheet. Place in plastic bag when frozen. To reheat, arrange in single layer and bake at 375° for 10 minutes.

To reduce recipe to 12 servings use:
1/4 pound sausage
1/4 pound cheese
3/4 cup biscuit mix
3-4 tablespoons water
