Ingredients
- 1 pound Italian sausage
- 1-2 pounds potatoes in small pieces. Peeled russets cubed, fingerlings, or halved red potatoes all work fine.
- 1 onion cut into large chunks
- 2 bell peppers chopped or about 20 mini peppers
- 3 tablespoons olive oil
- 1 tablespoon chopped garlic
- 1 teaspoon Italian seasoning
- 1/2 cup chicken broth or white wine, more if you're using a low fat sausage like turkey or chicken
Method
Step 1
Combine oil and seasonings in a large bowl and combine with vegetables. Pour the vegetables into a 15x11 baking dish or a sheet pan. Add the sausage to the bowl to coat, adding more oil and seasoning if necessary. Place the sausage on top of the vegetables.
Step 2
Bake at 425° for 30 minutes, turning sausage once.
Step 3
Toss the sausage and vegetables together. Add wine to pan. Bake for another 12-15 minutes.
