Ingredients

  • 1 pound Italian sausage cut into 1 inch pieces
  • 1-2 pounds potatoes in small pieces. Peeled russets cubed, fingerlings, or halved red potatoes all work fine.
  • 1 onion cut into large chunks
  • 2 bell peppers chopped or about 20 mini peppers
  • 3 tablespoons olive oil
  • 1 tablespoon chopped garlic
  • 1 teaspoon Italian seasoning
  • 1/2 cup chicken broth or white wine, more if you're using a low fat sausage like turkey or chicken

Method

Step 1

Combine sausage, potatoes, onions and peppers in a large baking dish. Combine oil and seasonings and pour over sausages and vegetables. Toss to coat.

Step 2

Bake at 425° for 30 minutes. Pour broth or wine into bottom of pan and turn sausage and vegetables. Bake for another 15-20 minutes.
