Ingredients

  • 12 ounces vanilla wafers (3 cups crushed)
  • 3/4 cup butter
  • 1 cup sugar
  • 6 eggs
  • 1/2 cup milk
  • 2-2/3 cup flaked coconut
  • 1 cup chopped pecans
  • Optional toppings: Cool Whip, whipped cream, ice cream, chopped nuts, additional coconut, etc.

Method

Step 1

Crush vanilla wafers in blender.

Step 2

Cream butter and sugar and continue beating until light and fluffy. Add eggs one at a time, beating well after each one. Batter may appear curdled. Add crumbs alternately with 1/2 cup milk. Stir in coconut and pecans.

Step 3

Spoon into greased 13-in. x 9-in. pan. Bake at 350° for 45 to 50 minutes. Cool cake in pan for 10 minutes. Remove from pan and finish cooling on rack.

Step 4

Garnish with whipped cream, Cool Whip, nuts, or toppings of your choice.

This recipe makes a great base for a variety of toppings. Have the kids decorate their own slice.
