Ingredients

  • 6 (8 ounces each) cod (or other white fish) fillets
  • 1 cup milk
  • 1 teaspoon lemon juice
  • 1/2 cup olive oil
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons paprika
  • salt & pepper
  • 1/4 pound crackers (like Ritz), finely crushed
  • 1/2 cup margarine, melted
  • 1/2 cup white wine

Method

Step 1

Marinate fish fillets in milk, lemon juice, Worcestershire sauce, salt, pepper, olive oil, and paprika for at least two hours or overnight in refrigerator.

Step 2

Remove fish from marinade and dip into cracker crumbs. Cover all surfaces well.

Step 3

Place fillets in a greased baking pan. Drizzle with melted butter. Pour wine into pan but not on fish.

Step 4

Bake at 400° for about 10 minutes until fish is flaky.
