Ingredients

  • 1 cup water
  • 2 tablespoons margarine
  • 1/2 teaspoon salt
  • 1/3 cup milk
  • 1 package (4 servings) instant mashed potatoes
  • 2 eggs, beaten
  • 1/2 cup shredded sharp cheddar cheese
  • 1/8 teaspoon cayenne pepper
  • 1 tablespoon grated Parmesan cheese

Method

Step 1

Bring first 3 ingredients to a boil in a saucepan. Remove from heat. Stir in milk and potatoes. Beat in eggs, cheddar cheese and cayenne. Put in a well greased casserole dish (2 quart). Sprinkle with Parmesan. Bake at 400° for 25-30 minutes.
