Ingredients

  • 4-6 pound boneless pork loin roast
  • 2 cups fresh or frozen cranberries
  • 1 cup corn syrup
  • 1 cup sugar
  • 1/4 teaspoon cinnamon

Method

Step 1

In a saucepan mix glaze ingredients and boil for 2 minutes. Let stand at room temperature for 10 minutes. Remove 1/2 cup of liquid for cooking and reserve the rest for serving.

Step 2

Season roast with salt and pepper and place in a roasting pan. Roast at 325° for 2 to 3 hours (20-25 minutes per pound) until internal temperature reaches 145°, glazing several times during the last 40 minutes. Serve with reserved cranberry mixture.
