Ingredients

  • 1 teaspoon dill
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 1 teaspoon minced dried onion
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup butter, melted
  • 3 cups baby carrots
  • 4 celery ribs cut into 2-in pieces
  • 2 medium onions cut into wedges
  • 1 tablespoon olive oil
  • 8 turkey breast tenderloins
  • 2 teaspoons cornstarch
  • 1/4 cup water

Method

Step 1

Combine first 6 ingredients.

Step 2

Combine 2 teaspoons of seasoning mixture with butter and toss with vegetables. Transfer to a roasting pan. Bake vegetables uncovered at 425° for 15 minutes.

Step 3

Rub turkey tenderloins with oil. Sprinkle with remaining seasoning mix. Move vegetables to sides of pan and put turkey in the center. Bake uncovered at 425° for 20-25 minutes.

Step 4

Remove turkey and vegetables to a serving platter and keep warm.

Step 5

Pour cooking juices into a small saucepan. Mix cornstarch and water until smooth. Gradually stir into pan. Bring to a boil. Cook and stir for 2 minutes. Serve with turkey and vegetables.
