Ingredients

  • 1 loaf day old French bread
  • 1 large onion chopped (1 cup)
  • 2 tablespoons butter
  • 1 package (10 ounces) frozen chopped spinach, thawed
  • 1 teaspoon dill weed
  • 1/2 teaspoon salt, divided
  • pinch pepper
  • 1-1/2 cups (6 ounces) shredded Swiss cheese, divided
  • 3 eggs
  • 2-1/2 cups milk

Method

Step 1

Cut bread into thin slices. Line bottom of greased shallow 6 cup baking dish with half the slices.

Step 2

In a large skillet saute onion in butter for 5 minutes. Squeeze spinach dry and add to the pan with dill, 1/4 teaspoon salt and pepper. Stir just to combine.

Step 3

Spread spinach over bread in pan. Sprinkle with 1 cup of cheese. Arrange remaining bread overlapping on top.

Step 4

In a bowl beat eggs. Stir in milk and remaining 1/4 teaspoon of salt. Pour over bread. Sprinkle with remaining cheese. Cover and refrigerate at least 1 hour or overnight.

Step 5

Bake uncovered at 375° for 45 minutes.
