Ingredients

  • 1-1/2 pounds sweet potatoes
  • 2 eggs, beaten
  • 1/2 cup milk
  • 1/4 cup melted margarine
  • 2 tablespoons light brown sugar
  • 1 teaspoon grated orange peel
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • dash ground cloves

Method

Step 1

Cook unpeeled potatoes in oven at 325° for 30 minutes or until tender. Slip off skins. Mash potatoes until smooth.

Step 2

Add remaining ingredients and beat until smooth. Turn into greased casserole dish. Bake uncovered at 325° for 1 hour.

Leftovers make great waffles. Mix equal parts waffle mix and leftover sweet potato bake. Add enough water or milk until it’s like thick cake batter.
