Ingredients

  • 1 box (15 ounces) raisin bran plus 1 cup raisins
  • 3 cups sugar
  • 1 quart buttermilk
  • 5 teaspoons baking soda
  • 3 cups whole wheat flour
  • 2 cups white flour
  • 2 teaspoons salt
  • 1 cup oil
  • 4 eggs

Method

Step 1

Mix cereal, raisins, sugar, baking soda, flours and salt. Beat eggs and add oil. Add to dry mixture along with buttermilk. Refrigerate overnight before using. Mixture will keep in refrigerator for 6 weeks.

Step 2

To bake muffins, fill greased muffin tins three-quarters full. Bake at 400° for 15 to 20 minutes.
