Ingredients

  • 2 cups graham cracker crumbs
  • 3 sticks margarine, divided
  • 2 eggs
  • 2 cups confectioners' sugar
  • 1 can (20 ounces) crushed pineapple
  • 3 ripe bananas
  • 2 cups heavy cream
  • 1/2 cup chopped walnuts
  • 1 cup maraschino cherries, halved

Method

Step 1

Mix together graham cracker crumbs and one stick of margarine. Place in bottom of a 13x9-in. pan.

Step 2

Mix together eggs, remaining margarine and sugar. Beat for 15 minutes (very important). Spread over cracker crumbs.

Step 3

Drain pineapple, reserving a few teaspoons of juice. Spread pineapple over mixture. Slice bananas over pineapple. Sprinkle bananas with a small amount of reserved pineapple juice.

Step 4

Whip heavy cream and spread over fruit. Then sprinkle with nuts and top with cherries. Refrigerate overnight.

Make sure to use fresh pasteurized eggs and beat the egg mixture well for a full 15 minutes
