Ingredients

  • 1 fresh beef brisket (3 to 4 pounds)
  • 1-1/4 cup water, divided
  • 1/2 cup chopped onion
  • 3 garlic cloves, minced
  • 1 tablespoon oil
  • 1 cup ketchup
  • 3 tablespoons red wine vinegar
  • 3 tablespoons lemon juice
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons cornstarch
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon liquid smoke

Method

Step 1

Preheat oven to 275°. Place brisket in large Dutch oven with 1/2 cup of water. Cover and bake for 2 hours.

Step 2

Meanwhile in a medium saucepan saute onion and garlic in oil until tender. Add 3/4 cup of water and remaining ingredients except liquid smoke. Simmer uncovered for 1 hour, stirring occasionally. Add liquid smoke and mix well.

Step 3

Drain drippings from dutch oven. Pour sauce over meat. Cover and bake 1 to 2 hours longer or until meat is tender.

This recipe works great with tri-tip too. Reduce the cooking time by about half.
