Ingredients

  • 1 cup instant potato flakes
  • 1/3 cup grated Parmesan cheese
  • 1/4 teaspoon celery salt
  • 1/4 teaspoon garlic powder
  • 1/4 cup margarine, melted and cooled
  • 2 eggs
  • 4-5 cups mixed vegetables: mushrooms, peppers, broccoli, cauliflower, and zucchini
  • Vegetable dip or ranch dressing

Method

Step 1

Combine flakes, cheese, salt, garlic powder and margarine. In another bowl, beat eggs.

Step 2

Dip vegetables one at a time into egg then into potato mixture. Coat well. Place on ungreased baking sheet. Bake at 400° for 20-25 minutes. Serve with dip or ranch dressing.
