Ingredients

  • 5 cups blueberries
  • 1-1/2 tablespoons lemon juice
  • 2 cups flour
  • 3 cups sugar, divided
  • 1 cup milk
  • 1/3 cup margarine, softened
  • 2 teaspoons baking powder
  • 1 teaspoon salt, divided
  • 2 tablespoons cornstarch
  • 1-1/2 cups boiling water
  • whipped cream

Method

Step 1

Spread berries in well-greased 2-1/2 quart shallow baking dish. Sprinkle with lemon juice.

Step 2

In a bowl stir flour, 1-1/2 cups sugar, milk, butter, baking powder and 1/2 teaspoon salt until blended. Spread over berries to edge of baking dish.

Step 3

In another bowl mix 1-1/2 cups sugar, cornstarch, and 1/2 teaspoon salt. Sprinkle over batter. Pour boiling water over all.

Step 4

Bake at 350° for 1 hour. Serve warm or cool with whipped cream.
