Ingredients

  • 2 tablespoons oil
  • 1 pound red small potatoes, sliced 1/4 inch thick
  • 1 package (10 ounces) refrigerated cooked chicken breast strips, or leftover turkey or chicken
  • 2 cups frozen broccoli, thawed or fresh chopped broccoli.
  • 1 can condensed broccoli cheese soup, or substitute any cream soup with 1/2 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/4 teaspoon garlic powder
  • 1/4 cup grated Parmesan cheese

Method

Step 1

Heat oil in a skillet. Add potatoes. Cover and cook for 10 minutes, stirring occasionally. Stir in chicken and broccoli and cook for 5 minutes until blended and hot. Add soup, milk, and garlic powder. Cook for 5 minutes until hot. Sprinkle with cheese. Bring to a boil.

Step 2

Cover and cook over low heat 5 minutes or until potatoes are tender. Finish in the broiler for a few minutes if you want to brown the top.
