Ingredients

  • 1 can of Spam, cut into strips
  • 1/2 cup celery, diced
  • 1/2 cup green pepper, diced
  • 2 tablespoons oil
  • 1 can (14 ounces) pineapple chunks, 1/2 cup of juice reserved
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 1/4 teaspoon ginger

Method

Step 1

Combine celery, green pepper and oil in a microwave safe dish. Cover and microwave on high for 2 minutes. Stir and microwave for 2 more minutes.

Step 2

Add Spam, pineapple juice, soy sauce, corn starch and ginger. Stir. Microwave for 5 minutes. Stir. Add pineapple chunks and microwave for 2 minutes more.
