Ingredients

  • 3 medium red potatoes, or about 2 pounds potatoes of your choice, thinly sliced
  • 1 medium onion, sliced
  • 1/2 teaspoon Italian seasoning
  • 1/8 teaspoon pepper
  • 2 tablespoons margarine, melted

Method

Step 1

In an ungreased 2 quart microwave safe dish, layer half the potatoes and onion slices. Combine seasoning and pepper, and sprinkle 1/2 over the potatoes and onion. Drizzle with half the margarine. Repeat layers.

Step 2

Cover with vented plastic wrap. Microwave on high for 12 minutes until potatoes are tender, turning dish after 6 minutes.
