Ingredients

  • 1 can (8 ounces) crushed pineapple
  • 1 package (.8 ounces) cook and serve vanilla pudding
  • 1 package (3 ounces) strawberry gelatin
  • 3 cups sliced fresh strawberries
  • 1 graham cracker crust
  • 1/2 cup Cool Whip

Method

Step 1

Drain pineapple, reserving juice in 2-cup measuring cup. Set pineapple aside.

Step 2

Add enough water to juice to measure 1-1/2 cups. Transfer to saucepan. Whisk in the pudding mix and gelatin until combined. Bring to a boil. Cook and stir for 1 to 2 minutes until thickened.

Step 3

Stir in pineapple. Remove from heat. Cool for 10 minutes. Add strawberries. Toss gently to coat. Pour into crust. Refrigerate until set, about 3 hours. Top each slice with Cool Whip.
