Ingredients

  • 1/4 cup margarine
  • 1/2 cup sugar
  • 2 eggs
  • 3/4 cup applesauce
  • 1-3/4 cups flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar mixed with 1/4 teaspoon cinnamon
  • 2 tablespoons melted butter

Method

Step 1

Cream butter and sugar. Beat in eggs one at a time until light and fluffy. Beat in applesauce.

Step 2

Stir together flour, baking powder and salt. Add to butter mixture. Stir just enough to moisten.

Step 3

Fill greased muffin tins three-quarters full. Bake at 425° for 13 minutes. While warm, dip tops or all sides into melted butter and then cinnamon sugar. If it won't stick use a little cooking spray or melted butter.
