Ingredients

  • 1/4 cup salt pork, finely diced
  • 2 medium onions, finely chopped
  • 4 medium potatoes, cubed
  • 3 cups boiling water
  • 2 pounds white fish fillets, cut into bite size pieces
  • 1-1/2 teaspoon salt
  • 1/8 teaspoon white pepper
  • 2 cans (13 oz each) evaporated milk

Method

Step 1

In a pot sauté salt pork and onions until pork pieces are crispy brown. Add potatoes, water, salt and pepper. Cover pan. Simmer 10-15 minutes. Add fish. Cook 5-10 minutes longer. Stir in evaporated milk, heat thoroughly without boiling.
