Ingredients

  • 1 can (15 ounces) pumpkin
  • 4 eggs
  • 1 cup oil
  • 1/3 cup water
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon allspice
  • 3 cups sugar
  • 3-1/2 cups flour
  • 1-1/2 teaspoon salt
  • 2 teaspoons baking soda

Ingredients (glaze)

1 cup confectioners’ sugar

2 tablespoons milk

Method

Step 1

Mix pumpkin, eggs, oil, water, cinnamon, nutmeg and allspice.

Step 2

Sift together flour, sugar, salt and baking soda. Add liquid ingredients to dry ingredients and mix well.

Step 3

Grease and flour 2 9-in. x 5-in loaf pans. Pour batter into pans. Bake at 350° for 1 hour 10 minutes. When cooled, mix glaze ingredients and pour over.
