Ingredients

  • 1 can (20 ounces) pineapple chunks, drained, juice reserved
  • 1-1/4 cups ketchup
  • 1 tablespoon brown sugar
  • 1 tablespoon cider vinegar
  • 4 medium carrots, sliced
  • 1/2 green pepper chunks
  • 4 pork chops
  • 2 tablespoons vegetable oil

Method

Step 1

In a saucepan over medium-high heat, cook pineapple juice, ketchup, brown sugar and vinegar until hot. Add carrots, pineapple and green pepper.

Step 2

Brown pork chops in oil. Place in greased baking dish. Spread with vegetable mix. Cover with foil. Bake at 350° for 25-40 minutes depending on thickness of chops.
