Ingredients

  • 1 cup drained canned whole tomatoes
  • 1 package (8 ounces) cream cheese
  • 2 cups (8 ounces) cheddar cheese, grated
  • 1/2 cup margarine, softened
  • 1/2 cup chopped onion
  • 2 cloves garlic, crushed
  • 1 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 8 ounces chopped walnuts
  • 1/2 tomato cut into garnish (optional)

Method

Step 1

In a large bowl combine all ingredients except nuts. Beat with electric mixer until smooth. Spoon out onto a large piece of wax paper. Roll with wax paper to form a log shape. Place in freezer for 1 hour or until firm. Remove wax paper and smooth log shape. Cover with chopped nuts and garnish with bits of fresh tomato.
