Ingredients

  • Oil, enough to cover bottom of pot
  • A few slices of salt pork, chopped
  • 3-4 garlic cloves
  • 4 tablespoons fresh parsley, chopped
  • 1 can (32 ounces) whole tomatoes, squished with your hands, or 4-5 small cans prepared tomatoes
  • 2 tablespoons sugar
  • 4 tablespoons fresh basil
  • 1 tablespoon oregano
  • 1 scant teaspoon crushed red pepper

Method

Step 1

Heat oil in pot. Add salt pork and cook until fat is rendered.

Step 2

Add garlic and cook until golden. Remove salt pork and garlic from pan.

Step 3

Add parsley and simmer 2 minutes. Add tomatoes and stir. Add sugar and stir.

Step 4

Add basil, oregano and red pepper. Bring to a boil. Reduce heat and simmer for about an hour.
