Ingredients

  • 1-1/2 cup lentils
  • 4 ounces pepperoni, halved and thinly sliced
  • 1/2 cup onion, chopped
  • 1 can (6 ounces) tomato paste
  • 1-1/2 teaspoon salt
  • 1-1/4 teaspoon oregano
  • 1/4 teaspoon sage
  • 1/8 teaspoon cayenne pepper
  • 2 medium tomatoes, peeled and chopped
  • 1 large carrot, thinly sliced
  • 1 stalk of celery, chipped
  • 6 cups of water or chicken broth

Method

Step 1

Rinse lentils.

Step 2

In a large pot combine lentils, water, pepperoni, onion, tomato paste, salt, oregano, sage, and cayenne. Bring to a boil. Reduce heat, cover and simmer for 30 minutes.

Step 3

Add remaining ingredients. Cover and simmer for 40 minutes, stirring occasionally.
