Ingredients

  • 1/2 pound Italian sausage
  • 1 medium onion, chopped
  • 1 medium green pepper, chopped
  • 1 large carrot, chopped
  • 2 cans (10-1/2 ounces each) chicken broth
  • 1 can (14-1/2 ounces) diced tomatoes with liquid
  • 1 cup water
  • 1 garlic clove, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon dried thyme or other seasonings
  • 3/4 cup dry lentils, rinsed

Method

Step 1

In soup kettle, brown and crumble sausage. Drain.

Step 2

Add next 9 ingredients. Bring to a boil. Add lentils and season as desired. Return to a boil. Cover, reduce heat, and simmer for 60-70 minutes until lentils are tender.
