Ingredients

  • 1 boneless smoked shoulder (2-3 pounds) Note that the roast may also be called a smoked picnic roast, or Boston butt
  • 1 cup vinegar
  • 1/2 cup sugar
  • 4-6 each, carrots, medium potatoes, onions, turnip slices, and cabbage wedges
  • Enough water to cover meat

Method

Step 1

Place shoulder in a large pot. Add vinegar and sugar. Cover meat with water. Cover pot. Simmer slowly for 1 hour.

Step 2

Drain. Then cover meat again with water. Cover pot and simmer slowly for another 40-50 minutes.

Step 3

Add vegetables. Continue simmering for another 30-40 minutes, until meat is fork tender.
