Ingredients

  • 1-1/2 pounds pork cubed
  • 1 can (14-1/2 ounces) pineapple chunks
  • 1/4 cup sugar
  • 2 tablespoons cornstarch
  • 1/4 cup vinegar
  • 3 tablespoons soy sauce
  • 1 green pepper, sliced
  • 1/2 cup onion, sliced
  • 1/2 teaspoon salt
  • 1 bouillon cube

Method

Step 1

Brown pork in large skillet. Add 1/2 cup water and simmer for one hour.

Step 2

Drain pineapple juice into a small bowl, reserving pineapple.

Step 3

Combine sugar and cornstarch and mix well. Add pineapple syrup, vinegar, soy sauce, salt, and bouillon. Add mixture to pork and stir until thick.

Step 4

Add pineapple, green pepper and onion. Simmer for 10 minutes until vegetables are tender.

Works great with leftover pork from Pork Roast with Fruit Sauce
